Liquid & Larder has been appointed following a competitive tender as the official food and beverage partner for The EVE Hotel Sydney – the city’s most anticipated new-build boutique hotel opening of the year. 

About The Venues:

Located in Sydney’s Redfern, on the fringe of Surry Hills and Redfern’s creative hub, The EVE sits at the heart of Wunderlich Lane, a new lifestyle precinct. It will feature a rooftop restaurant and bar, poolside dining, a lobby bar, and in-room dining, all under Liquid & Larder’s exclusive hospitality management.

Atop The EVE’s lush rooftop oasis is Lottie, a contemporary Mexican restaurant where you can expect menus, crafted with fresh Australian produce. We believe wine should be an experience—vibrant, expressive, and harmoniously matched with the bold and rich flavours of Mexican cuisine. Our wine list celebrates both tradition and innovation, offering selections that enhance the essence of our menu.

Bar Julius is The Eve’s European-inspired lobby bar. A welcoming and vibrant hub that caters to every taste—open early and up late, from caffeine to cocktails served alongside all-day bistro classics.Our wine list here is thoughtfully curated to reflect the elegance and diversity of Europe’s most renowned wine regions, while also highlighting new world classics.  It’s the place to settle in and reset.

We are now assembling a team of engaging sommeliers to work across both venues, collaborating closely with our Head Sommelier, Christiane Poulos.

About The Roles:

You will showcase excellent attention to detail and communication skills, providing exceptional customer service, creating extraordinary experiences and exceeding our guests’ expectations. You will  achieve this through assisting in wine list management,  engagement of staff, product knowledge and communication surrounding this, as well as through building rapport with our guests and other team members across both venues.

The ultimate aim is to go above and beyond, exceeding customers’ expectations, and leaving them thoroughly satisfied, wanting for nothing.
